Sourdough refined sugar free snickerdoodle cookies

  • 60 g sourdough starter
  • 80 g coconut oil
  • 50 g honey
  • 150 g coconut sugar
  • 1 egg
  • 200 g AP flour
  • 4 g sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon

For rolling dough balls

  • 3 tbsp sugar (or coconut sugar for refined sugar free)
  • 1/4 tsp cinnamon

Add started, oil, honey, sugar, and egg to a bowl and mix

Add remaining dry ingredients to the bowl and mix until fully incorporated

Place the dough in a container with a lid and let ferment at room temperature for at least 10 hours

Line a baking sheet with parchment paper

Roll dough balls in cinnamon sugar mixture

Place on lined baking sheet and bake at 350 for 8-10 minutes

(Dough can be stored in the fridge for weeks)
