Bbq pulled chicken with coleslaw

Crockpot chicken:

  • 2 lbs Chicken breast
  • 1 onion diced
  • 1 cup ketchup
  • 1/4 cup coconut sugar
  • 3 tbsp apple cider vinegar
  • 2 tbsp worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Shredded cheese of choice (for topping)

Coleslaw mix

  • 2 cups coleslaw mix
  • 2 tbsp honey
  • 3-4 tbsp mayo (or more for preference)
  • Juice from 1/2 lemon
  • 1 avocado diced
  • Fresh cilantro to taste
  • Salt and pepper to taste

Add all of the chicken ingredients to a crockpot. Place the lid on the crockpot and cook on high for 3-4 hours or low for 6-8 hours. Once the chicken is cooked shred it using a fork. Make the coleslaw mixture by adding all ingredients to a bowl. You can serve this with potatoes, as a wrap, or a sandwich. To assemble add chicken, shredded cheese of choice, and then top with coleslaw mixture.
