Pumpkin cinnamon roll pancakes

Pancake mix

  • 1 cup AP flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp pumpkin pie spice
  • Pinch of salt
  • 3/4 cup milk
  • 1/4 cup pumpkin purée
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp melted butter

Brown sugar filling

  • 1/4 to 1/2 cup melted butter
  • 1/4 to 1/2 cup brown sugar
  • 1 tbsp cinnamon

Icing

  • Powdered sugar
  • Milk

(Not measured just add milk until it’s the right consistency)

Add all pancake mix ingredients into a bowl and mix

In another bowl add brown sugar filling ingredients and mix

In another bowl make your icing for serving

Heat a skillet over medium heat and cook pancakes

Before flipping add a few tbsp of brown sugar filling to each pancake

Once cooked add icing and serve
