Refined sugar free pumpkin roll

Cake:

  • 3/4 cup flour
  • 1/2 tsp Himalayan salt
  • 1 tsp baking soda
  • 1 tsp pumpkin spice
  • 3/4 cup coconut sugar
  • 2/3 cup pumpkin puree
  • 3 eggs

Filling:

  • 1 cup cream cheese
  • 1 tsp vanilla
  • 2 tbsp maple syrup

Combine all ingredients for the cake in a bowl

Spread out dough onto parchment lined baking sheet

Bake at 350 for 15 minutes

When it comes out of the oven roll the cake up

Let it cool completely in the fridge

Combine ingredients for the filling in a bowl

Once cake is cooled unroll and spread cream cheese on top

Roll it back up, slice, and serve
