Turkey shepherds pie

Topping

  • 1 1/2 cups potatoes (around 3 potatoes)
  • 1 1/2 cups cooked cauliflower
  • 1/2 cup Parmesan
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Filling

  • Olive oil
  • 1 lb ground turkey
  • 1/2 to 1 onion
  • 1 tbsp minced garlic
  • 1/2 cup diced carrots
  • 1 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 bag frozen peas and corn (or 1 cup)
  • 1 tsp rosemary
  • 1/2 tsp thyme
  • Salt and pepper to taste

Boil potatoes and cook cauliflower

Add oil to a pan and cook turkey

Add onions, garlic, and carrots (if using fresh) and cook for 5 minutes

Add tomato paste, seasonings, broth, and frozen veggies

Drain cooked potatoes and cauliflower

Mash all topping ingredients together

In a greased baking dish add filling and then topping

Bake at 350 for 30 minutes

Top with cheddar cheese
