Granola

FOR CHOCOLATE GRANOLA: add 3 tbsp of cocoa powder and omit the cinnamon (can also add freeze dried strawberries)

FOR VANILLA ALMOND GRANOLA: add 1/2 tsp almond extract, white chocolate chips instead of regular, and optional slivered almonds

  • 3 cups oats (half quick oats half rolled)
  • 1/3 cup pumpkin seed
  • 4 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 tbsp vanilla
  • 1 cup chocolate chips

Preheat oven to 350

Line a pan with parchment paper

Combine all ingredients in a bowl

Transfer to pan and flatten mixture 

Bake for 10 minutes and rotate pan

Bake for another 10-13 minutes 

Let sit and cool completely

Break into clusters
