Crust
- 1/2 cup unsalted butter room temperature
- 1/4 cup sugar
- 1 cup flour
- 1/4 tsp salt
Lemon layer
- 1 cup sugar
- 2 tbsp flour
- 1/2 cup lemon juice
- 3 eggs
- 1 tbsp lemon zest
combine crust ingredients in a bowl
line an 8×8 dish with parchment paper
press crust into dish
use a fork to make a few holes in the crust
bake at 350 for 20 minutes
In the meantime make the lemon layer by combining all ingredients
pour the lemon layer over the baked crust
bake another 20-25 minutes
cool completely, cut into bars, and serve
