Pesto chicken sandwich

  • Oven baked chicken (or your choice of lunch meat) (refer to my chicken recipe posted under meals)
  • Sourdough bread
  • Mayo
  • Pesto
  • Avocado (1/2 per sandwich) (mashed and mixed with lemon juice, salt, and pepper)
  • Tomato sliced
  • Your choice of cheese (fresh mozzarella+parm, pepper jack, cheddar, etc)
  • Spring mix or arugula + spinach (massage greens in lemon juice before adding to sandwich)
  • Lemon juice

Put mayo on the outside of each slice of bread

Add pesto to the inside of one slice

Add cut up chicken or lunch meat

Add cheese on top

Heat half assembled sandwich in a skillet or in the oven until bread is crispy and cheese is melted

Once heated, add avocado to the other side of the bread

Then add greens and tomato

Cut in half and serve with a side of ranch
