- whole rotisserie chicken
- 1/2 red onion diced
- 2-3 celery stalks chopped
- 1 1/2 tsp dijon mustard
- juice from 1 lemon
- 2 tbsp pickle juice
- mayo to taste (this is your preference some prefer more some prefer less)
- salt and pepper to taste
- grapes + apple chopped (this is optional, if added omit pickle juice)
shred chicken (or add to a food processor to finely chop)
add chicken to a bowl with chopped veggies
add remaining ingredients and mix until combined
serve with bread, croissants, crackers, or make lettuce wraps
