Lobster rolls (cold New England style)

  • 1 lb cooked lobster meat (cut into chunks)
  • 4 tbsp salted butter
  • 1/3 cup mayo
  • 1/4 cup celery (minced)
  • 2 tbsp green onion (sliced)
  • 1 tbsp lemon juice (plus more wedges cut for serving)
  • 1 tbsp chives (minced)
  • salt and pepper to taste
  • 4 split-top hot dog buns

Rinse cooked lobster meat and pat dry

Mix mayo, celery, green onion, lemon juice, chives, salt, and pepper together

Melt butter in a skillet

Add the lobster and cook for 3-5 minutes

Remove meat with a slotted spoon and combine with mayo mixture

Toast buns in the buttered skillet, until crispy golden

spoon the mix into each bun

serve with lemon wedges and potato chips
