Chicken nuggets
- Chicken breast
- 1/4 cup pickle juice
- 1/4 cup milk
- 1 tsp apple cider vinegar
- 1/3 cup cassava flour
- 1 tsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Salt and pepper to taste
- Avocado oil spray
Add vinegar and milk to a bowl and let sit for 5 minutes (this makes a buttermilk)
Add pickle juice
Cut chicken into nuggets then add them to buttermilk mixture
Marinate in the fridge for 30 minutes
Combine flour and seasonings in a bowl
After chicken is marinated place nuggets into flour and coat
Transfer nuggets to a lined dish
Spray with avocado oil
Bake at 425 for 30 minutes minutes
Salad
- Lettuce
- Cherry tomatoes
- Avocado diced
- Corn
- Boiled egg
- Shredded cheese
- Pickled red onion
- Crispy red peppers
- Crispy jalapeños
- Avocado lime ranch (Chick-fil-A brand)
