Egg scramble

(Most of this is not measured add as much as you prefer)

  • 2 eggs
  • Olive oil
  • 2 tbsp cottage cheese (optional but adds protein and makes eggs fluffy)
  • Red onion sliced
  • Spinach
  • Mushrooms
  • Bell pepper
  • Shredded cheddar cheese
  • Salt and pepper to taste

Add oil to a pan and heat over medium

Add onion, bell pepper, and mushrooms to the pan and cook until soft

Crack eggs into a bowl and add cottage cheese

Mix until combined

Pour eggs into pan and reduce heat

When eggs are almost completely cooked add cheese and spinach

Combine until spinach is cooked D

Remove from heat and season

Serve with kimchi/sauerkraut on the side
