Honey yeast rolls (perfect for the holidays)

(Makes about 15)

  • 4 1/2 cups flour (572g)
  • 4 1/2 tsps instant yeast
  • 2 tsp salt
  • 1 1/3 cup whole milk
  • 1/4 cup unsalted butter
  • 4 tbsp honey
  • 1 large egg
  • 2 large egg yolks

Egg wash

  • 1 egg beaten

Honey butter topping

  • 1/4 cup butter
  • 2 tbsp honey

Start by adding flour, yeast, and salt to a mixing bowl

Melt butter, milk, and honey together until its lukewarm then add to dry ingredients

Beat egg and egg yolks in a bowl then add to your mixing bowl with the other ingredients

Knead with the dough hook for 5-7 minutes

Add sticky dough to an oiled bowl, cover with a towel, and let rise for 30 minutes to an hour

(If making dough in advance don’t rise on the counter immediately transfer to the fridge for 12-24 hours)

To assemble rolls divide them into 15 pieces and roll into balls (each piece should weigh 72 grams)

Add dough balls to a buttered pan and let them rise for 30 minutes (if you took the dough out of the fridge they will need to rise for 1-2 hours)

After they rise brush them with egg wash

Bake at 350 for 20 minutes or until golden brown

Melt butter and honey and pour over the rolls after they come out of the oven

(If you don’t want a honey butter roll you could melt butter, garlic, and herbs together instead)
