- 6 large eggs
- 1/2 cup diced onion
- 2 cups spinach
- 2 tsp minced garlic
- 1 1/2 cups almond flour (or 3/4 cup almond flour 1/4 cup coconut flour)
- 1/2 tsp baking powder
- Salt and pepper to taste
- 1 cup shredded cheese
Heat a skillet over medium and cook onion, spinach, and garlic until soft
Whisk eggs in a bowl then add the skillet mixture
Add remaining ingredients and mix
Scoop batter onto a parchment lined baking sheet
Bake at 375 for 20-25 minutes
