Lemon blueberry loaf

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup sugar
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup whole milk
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup blueberries fresh or frozen (coated in flour so they don’t stick)

Glaze:

  • 1/2 cup powdered sugar
  • 2 tbsp lemon juice
  • 2 tbsp unsalted butter melted

Add butter, sugar, lemon zest, and lemon juice to a bowl and mix

Add eggs, vanilla, and milk and mix again

Add remaining dry ingredients and mix

Add blueberries and mix again

Pour batter into a parchment lined loaf pan

Bake at 350 for 1 hour

Make the glaze by combining all ingredients

Pour glaze over the loaf when it comes out the oven

Let cool and serve
