Dough:
- 1/2 cup flour
- 1/2 cup cottage cheese or Greek yogurt
- 1/2 tsp baking powder
- 1/4 tsp salt
- Garlic powder
- Italian seasoning
Garlic butter:
- 2-3 tbsp butter melted
- 1 tsp minced garlic
- Italian seasoning
- Salt and pepper to taste
- Grated Parmesan (around 1 tbsp?)
Toppings:
- Pepperoni
- Mozzarella
- Pizza sauce
Preheat the oven to 380
Add all dough ingredients to a bowl and mix until well combined
Add all garlic butter ingredients to a bowl and mix
Grease a muffin pan with garlic butter (you should have 4 muffins)
Divide the dough into 4 pieces then add each piece to the muffin pan
Shape each muffin and flatten around the tin so you have 4 equal muffin cups
Brush the dough with garlic butter
Add 2 pepperonis to the bottom, a tsp of sauce, and sprinkle mozzarella, followed by pepperoni to top
Bake for 30 minutes
