Veggie egg bake

  • 12 eggs
  • 1/2 cup bell pepper diced
  • 1/2 cup onion chopped
  • 1 cup kale or spinach chopped (can use frozen)
  • 1 cup broccoli chopped (optional and can replace with any veggie)
  • 1/2 cup tomatoes chopped
  • 1/4 tsp turmeric
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Whisk eggs in a large bowl

Add all chopped vegetables and mix

Add remaining ingredients and mix

Line a pan with parchment paper

Bake at 375 for 30-40 minutes
