The best chicken deli sandwich

  • Sourdough
  • Pesto
  • Dijon mustard
  • Avocado
  • Shaved chicken deli meat
  • Sliced cheese of choice
  • Sliced banana peppers
  • tomato
  • Baby spinach and arugula
  • Grated Parmesan
  • Olive oil
  • Lemon

Add olive oil to a skillet over medium heat

While the skillet is heating take two slices of sourdough and add mustard to one side and pesto to the other

On top of the mustard slice add chicken and then cheese

Add both slices to the pan, cover, and cook until cheese is melted and bread is crispy

While that’s cooking add spinach mix to a bowl with a drizzle of olive oil, a squeeze of lemon juice, and grated parmesan

Toss the salad and set aside

Mash 1/2 an avocado with salt and pepper

Slice a tomato and squeeze lemon juice on top followed by salt and pepper

Once cooked remove from the skillet and add banana peppers on top of the cheese followed by spinach mixture and tomato

To the pesto slice of bread add mashed avocado on top then close the sandwich

Cut in half and serve with ranch and chips
