Small serving jambalaya

  • 6 oz sausage (I use chicken sausage)
  • 1/2 a medium onion
  • 1 tbsp minced garlic
  • 1/2 cup rice
  • 1 1/4 cup chicken broth
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp salt
  • Pepper to taste
  • Olive oil

Brown your sausage in a pan (with olive oil only if using chicken sausage)

Once cooked through remove your sausage from the pan and set aside (you will need to add more olive oil as you go if you’re using chicken sausage)

Add the onion to the pan and cook for a few minutes

Add rice and minced garlic and and cook for a few more minutes (continue to stir some so it doesn’t burn)

Now add the chicken broth and seasoning, cover with a lid, and simmer for 20 minutes (check half way through to see if you need to add water to keep it from getting dry)

After 20-30 minutes the rice should be fully cooked

Add the sausage back in and serve
