You can also make this a pasta!! Add 12 oz of cooked pasta to the sauce before you add the chicken. If you just want the creamy chicken you will have extra sauce to serve. This is delish with homemade mashed potatoes also!
- 4 chicken breast (could also use thighs or tenders)
- 2 tbsp olive oil (or butter)
- 1/2 an onion chopped (optional)
- 4 cloves garlic minced
- 1/2 cup dried tomatoes chopped
- 1 cup chicken broth
- 1 cup heavy cream (don’t substitute milk or half and half)
- 1/2 cup freshly grated Parmesan
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt & pepper to taste
- Fresh basil chopped (optional)
- 12 oz pasta (only if you’re making a pasta)
Start by cooking the chicken (I never cook chicken on the stove refer to my oven baked chicken recipe or cook it however you’d like)
Add oil or butter to a saucepan on medium heat
Add chopped onion (if using) and cook until soft
Add sun dried tomatoes and cook for a couple minutes
Add garlic and cook until fragrant
Add heavy cream and broth and bring to a simmer
Cook this for a couple of minutes then add cheese and seasonings
stir until fully melted and combined
Add your cooked chicken to the sauce
Once the sauce is slightly thickened remove from heat
Top with fresh basil and more Parmesan
