Smaller serving Mac and cheese

  • 4 oz cavatappi pasta
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar (shred the cheese yourself!)
  • 2 tbsp grated Parmesan
  • 1/4 tsp garlic powder
  • 1/4 tsp Dijon mustard
  • Salt & pepper to taste

Optional topping:

  • 2-4 tbsp breadcrumbs
  • 1 tsp butter melted
  • Hot honey

Boil your pasta in salted water, drain and set aside

In a saucepan make the roux but adding butter and flour cook this for about 3-4 minutes

Add the milk and simmer for a few minutes

Add the cheeses, seasoning, and mustard

Remove from heat and stir until combined

The sauce will thicken as the cheese fully melts

Add the pasta to the sauce and combine

Optional: transfer the pasta to a baking dish

Add the melted butter and breadcrumbs to a bowl and mix together

Top the Mac with the breadcrumbs and bake until crispy and golden

Serve with an optional drizzle of hot honey

(Or you can broil but keep a close eye)
