Spinach & artichoke dip

Ingredients:

  • 10 oz frozen spinach thawed and squeezed dry
  • 1 tbsp garlic minced
  • 14 oz artichoke hearts chopped
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 8 oz cream cheese
  • 1 cup mozzarella freshly shredded
  • 1/2 cup Parmesan freshly shredded
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Red pepper flakes (optional)

Preheat oven to 375

Heat olive oil in a pan, sauté garlic until fragrant

Add spinach and artichokes to pan; cook 2-3 minutes to remove moisture

Add spinach mixture to a large bowl with mayo, sour cream, cream cheese, shredded cheeses salt, pepper, and red pepper flakes (optional)

Mix well and transfer to a baking dish

Top with extra shredded cheese and bake for 25 minutes (broil for the last couple minutes)

Rest 5 minutes, then serve warm with your favorite crackers/chips
