Healthy almond flour pancakes

Pancake ingredients:

  • 25 grams almond flour
  • 7 grams flaxseed
  • 1 egg
  • 1/4 tsp baking powder
  • 1 tsp maple syrup
  • 1/2 tsp vanilla
  • Pinch of salt
  • Pinch of cinnamon
  • 2 tbsp milk
  • 40 grams blueberries (can use frozen)

Toppings:

  • Banana
  • Almond butter
  • Chocolate chips
  • Greek yogurt (I use oikos vanilla)
  • Honey

Add all pancake ingredients to a bowl and mix until combined

Heat a greased skillet over medium heat

Add pancake batter to the skillet in increments (2-3 pancakes)

Cook for about 2-3 minutes per side

Top with toppings and serve
