Refined sugar free peanut butter cake

Cake:

  • 3 large eggs
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil
  • 1/2 cup plain Greek yogurt
  • 1/2 cup almond milk (or any milk)
  • 2 tsp vanilla (or 1 tsp vanilla and 1/2 tsp almond extract)
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Preheat the oven to 350 and grease a 9 inch cake pan

In a large bowl mix eggs, maple syrup, coconut oil, yogurt, milk, and vanilla until well combined

Add the remaining dry ingredients to the bowl and mix

Add the batter to the prepared pan

Bake for 17 ish minutes

Icing:

  • 8 oz cream cheese softened
  • 1/2 cup natural peanut butter
  • 4 tbsp maple syrup
  • 1 tsp vanilla
  • 2-3 tbsp coconut sugar

Add the cream cheese, peanut butter, maple syrup and vanilla to a bowl and beat until smooth

Add the coconut sugar and mix until well combined

Frost the cake once it’s cooled completely
