Pumpkin cream cheese loaf with streusel topping

Bread:

  • 1 1/2 cups pumpkin
  • 2 eggs
  • 1/2 cup oil
  • 2 tsp vanilla
  • 1 cup sugar
  • 2 cups AP four (240 grams)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp each of nutmeg, allspice, ginger, and salt

Cream cheese filling:

  • 1 cup cream cheese softened
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1 1/2 tbsp cornstarch

Streusel topping:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 2 tbsp white sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold cubed butter

Start by adding pumpkin, eggs, oil, vanilla, and sugar to a bowl and mix until combined

Add the remaining dry ingredients and mix

In another bowl make the cream cheese filling by adding all the ingredients to a bowl and mixing until smooth

In another bowl make the streusel topping by adding all the ingredients to a bowl and mixing until crumbly

Line a loaf pan with parchment paper and preheat the oven to 350

Add half of the bread dough to the pan then add all of the cream cheese filling on top

Add the rest of the bread dough on top of that

Crumble the streusel on top

Bake for 1 hour
