Whole wheat hamburger buns (makes 8)

  • 2 cups whole wheat flour (240 g)
  • 1 1/2 cups all purpose flour (180 g)
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1/4 cup honey
  • 1 tsp salt
  • 3/4 cup warm milk
  • 1/4 cup warm water
  • 1 large egg (+ 1 for egg wash)
  • 3 tbsp unsalted butter (softened)

Add water, honey, and yeast to a bowl and let sit for 10 minutes until foamy

In a large bowl mix flours and salt, then add the yeast mixture to the bowl

Add warm milk, egg, and butter and mix until a sticky dough forms

Knead by hand or with a mixer for 8 minutes until smooth and elastic

Place the dough in a lightly greased bowl and cover to let rise for 1-2 hours

Punch down dough and divide into 8 equal pieces

Shape into smooth balls and place on a parchment lined baking sheet

Flatten slightly for a bun shape

Cover and let rise for 1 hour

After an hour brush each bun with egg wash

Bake at 375 for 15 minutes

Brush with melted butter immediately after baking

Top with a little flakey sea salt (optional)
