Chicken Parmesan Caesar Sandwiches

Ingredients

For the Sandwiches:

– 2 homemade sub rolls (my recipe is on this site)

– Butter, for spreading on rolls before toasting

– 2 chicken breasts, thinly sliced

– Salt, pepper, garlic powder, onion powder, and smoked paprika, to season

– ½ cup flour

– 1 egg, beaten

– ½ cup breadcrumbs

– Avocado oil, for frying

– Fresh mozzarella, sliced

– Marinara sauce, for layering

– Romaine lettuce, chopped

– Parmesan cheese, grated (for the salad and topping)

– Pepperoncini peppers, sliced, for topping

For the Homemade Caesar Dressing:

(This makes a lot so I usually half this)

– 1 cup mayonnaise

– ½ lemon, juiced

– 2 tsp Dijon mustard

– 2 tsp Worcestershire sauce

– 1 tbsp white vinegar

– 1 tsp pepperoncini juice (from the jar)

– 1 tsp minced garlic

– Grated Parmesan, to taste

– Salt and pepper, to taste

Make the Caesar Dressing

In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire, vinegar, pepperoncini juice, and minced garlic. Stir in grated Parmesan, then season to taste. Refrigerate until ready to use.

Prepare the Salad

In a medium bowl, combine chopped romaine, grated Parmesan, and a few spoonfuls of the homemade Caesar dressing. Toss until evenly coated and set aside.

Prepare the Chicken

Season the thinly sliced chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika. Set up a breading station with three shallow dishes: one with flour, one with the beaten egg, and one with breadcrumbs. Dredge each chicken piece in flour, then dip in egg, and coat in breadcrumbs. Set aside on a plate.

Fry the Chicken

Heat avocado oil in a skillet over medium heat. Fry the breaded chicken pieces for about 3–4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel–lined plate.

Toast the Rolls

Cut the sub rolls in half and spread the cut sides with butter. Toast in the oven at 375°F for about 5 minutes, until lightly golden.

Assemble the Sandwiches

Spoon a thin layer of marinara sauce on the bottom half of each toasted roll. Place the fried chicken on top, spoon more marinara over the chicken, and top with slices of fresh mozzarella. Return to the oven and broil for 1–2 minutes, just until the cheese is melted and bubbly.

Finish and Serve

Top each sandwich with a generous handful of the Caesar salad, a sprinkle of grated Parmesan, and a few pepperoncini slices. Serve warm with extra Caesar dressing on the side for dipping.
